Carrabba’s Sausage and Lentil Soup

Preparation Time: 10 minutes

Cooking Time: 1 hour 5 minutes

Servings: 6

Ingredients:

1 pound Italian sausages

1 large onion, diced

1 stalk celery, diced

2 large carrots, diced

1 small zucchini, diced

6 cups low sodium chicken broth

2 cans (14.5 ounces each) tomatoes, diced, with juice

2 cups dry lentils

2–3 garlic cloves, minced

1 ½ teaspoons salt

1 teaspoon black pepper

1-3 pinches red pepper flakes, more if you like it spicier

1 teaspoon dry basil

½ teaspoon dry oregano

½ teaspoon parsley

½ teaspoon dry thyme

Parmesan cheese for garnishing

Directions:

Preheat the oven to 350°F. Place sausages on a baking dish and poke a few holes in each sausage with a fork. Bake for 20-30 minutes, or until the sausages are done. Let cool down and slice the sausages.

Chop and mince the ingredients as specified in the ingredients list.

Place all the ingredients, except the parmesan cheese, in a large pot.

Bring the soup to a boil, then lower the heat and cover the pot.

Let the mixture simmer for an hour, adding water to reduce thickness when necessary. If you want a thicker soup, puree a portion of the soup and return it.

Ladle the soup into bowls and garnish with parmesan cheese before serving
